End of Summer Harvest

Produce is at its most abundant as summer comes to a close, so let’s create several summery side dishes and salads made with produce fresh from the garden! In this hands-on class, we’ll utilize several cooking methods, including the live fire theater to bring our dishes to life.

We’ll start with a grilled sweet potato and red onion salad. Then, we’ll grill up some zucchini and squash with herbs and garlic in a marinade. We’ll also cook up some side dishes using fresh summer corn, and perfectly roasted eggplant! Homemade dressings for the salads can be made in a mason jar for easy storage and use. During class, you’ll pick up tricks on preparation and presentation in the style of  “Garde Manger”, or “Keeper of cold foods”, so your dishes will look as good as they taste.

Each dish will be vegetarian and vegan friendly, and class will end with a lovely meal served outdoors! (Weather permitting).
