Vegan Salmon Croquettes and Cajun Grits

This is a cooking class led by Chef Sunny Stancell.

Salmon croquettes are similar to crab cakes. They’re small patties of salmon, breadcrumb, onion, and seasonings, then pan-fried. They’re crispy on the outside and tender on the inside. To replace the salmon we’re combining jackfruit, chickpeas, and nori (sushi wrappers) along with some craveable seasonings to amp up the flavor. Chef Sunny will also teach you how to make vegan-friendly, creamy Cajun grits. To garnish our golden brown delicious croquettes we’ll make a relish to top it all off and serve our meal with vegan wine.
